Red Chilly Garlic Sauce

Red Chilli Sauce | Chilii Garlic Sauce | Spicy Sauce | Red Chilli Chutney | Garlic Sauce
Ingredients:
250gm red chili peppers (adjust to your preferred spice level)
450gm cloves of garlic
1/4 cup vinegar (white or rice vinegar)
1 teaspoon salt 100gm olive oil
Instructions:
Rinse the red chili peppers and remove the stems.
Place the chili peppers in a bowl and cover with warm water.
Soak for at least 6-8 hours or overnight.
Preheat your oven to 180°C (350°F).
Drain the soaked chili peppers and place them on a baking sheet. Add garlic cloves.
Drizzle olive oil over the chilies and garlic.
Roast in the preheated oven for about 40 minutes or until fragrant and slightly caramelized.
Transfer roasted chili peppers and garlic to a blender or food processor.
Add salt and vinegar.
Blend until smooth.
If the sauce is too thick, add more vinegar or water to reach your desired consistency.
Blend again.
Adjust salt to taste.
Blend to combine.
Pour the sauce into a clean, sterilized glass jar.
Seal the jar and let it cool to room temperature before refrigerating.
Your homemade red chili garlic sauce is ready to use as a spicy condiment or flavor enhancer for your dishes.
